How do I use this to purchase tickets as I put this code into the ticket website and it's declining the coupon number. I'm not sure how to book using these coupons

You aren't required to make a booking to use the coupon, this would be why you're seeing an error!
Simply head to Cathedral Square Ice Rink and present your coupon on arrival, as advised under the redemption instructions on the coupon. Thanks!
