• Angus Beef Fillet - 200gms fillet, caramelised onion puree, carrot velouté, confit turnip, roasted broccoli and beef jus
• Cauliflower - cauliflower steak, cauliflower and licorice puree, crispy cauliflower, edamame and chimichurri
• Roasted Eggplant - quinoa and saffron rice, coconut and tomato curry, crispy curry leaves and chili oil
• Ora King Salmon- cauliflower and licorice puree, candied ginger, cajun chickpeas, roasted broccoli and radish
• Merino Lamb Loin - Silere lamb, roasted garlic and parsnip puree, peas, confit carrot and pea feathers
• Canter Valley Duck Breast - butternut velvet, purple baby carrot, pumpkin seeds, crisp sage and cherry glaze

• Poached Rhubarb- Addington Farm Rhubarb, rhubarb gelee, acai sorbet and candied chili pecans
• 72% Whittaker’s Chocolate Mousse - mint sponge, dulce de leche, honeycomb toffee, raspberry and voila flower
• Sticky Date Pudding - vegan caramel, cashew cream, banana and passionfruit salsa and chocolate soil
• Selection of Barry’s Bay Cheese - tamarillo chutney, spiced nuts and fruit bread
